So simple & to die for!
Serves 6-8
250g butter
1 cup caster sugar
3 eggs
2 tsp vanilla extract
2 cups self-raising flour
300ml carton sour cream
1/4 cup milk
3/4 cup toasted flaked almonds
1 cup white sugar
1 cup firmly packed brown sugar
1/2 cup pure or pouring cream
80g butter, extra
600ml thickened cream
375g bag white chocolate melts
1 Preheat oven to 160C. Grease and line a 20cm round cake tin with baking paper. Using an electric beater, beat butter and sugar for 5 minutes. Add eggs, one at a time, beating well after each addition. Add vanilla; beat until combined. Sift in flour, then add sour cream and milk. Fold into batter. Pour into tin; bake for 1 hour until cooked through. Turn onto a wire rack and allow to cool.
2 Line a baking tray with baking paper. Sprinkle with almonds. Place sugar in a non-stick saucepan over medium-low heat. Cook for 5 minutes, shaking pan every 2 minutes until sugar is melted and a rich caramel colour. Pour over almonds; allow to cool and set. Break into pieces.
3 To make caramel sauce, place brown sugar, pouring cream and extra butter in a saucepan over medium heat. Stir for 5 minutes until melted. Cover and refrigerate until thickened slightly.
4 Heat half thickened cream in a saucepan until bubbles appear. Stand for 1 minute. Add chocolate; stir until melted. Transfer to a bowl. Cover and refrigerate until mixture thickens. Place remaining cream in a bowl; beat, using an electric hand beater, until soft peaks form. Fold into chocolate mixture.
5 Cut cake into 4 layers. Place one layer on a serving platter. Spread 1/4 chocolate mixture over cake. Drizzle with caramel sauce and sprinkle with praline. Repeat layers three more times and serve.
Super tasty – this was made for my mother in-laws birthday. As a cake maker herself, I needed to impress – but this was so so easy too! Love it!

What do you think?
When Aaron and I got engaged, the first thing we wanted to find was the perfect venue in the Coromandel which had a gorgeous view. After months and months of searching – we almost settled for something in Rotorua! We googled, we hunted book a batch, we asked friends. Nothing. So in turn, we created something that helps people like us (brides & grooms!) find their special place to get hitched! The Wedding Map.
It’s a map of New Zealand, showing the venues & everything they entail. So when brides are on the hunt for a venue with a forest in Hamilton, it narrows down the results!
It’s simple, easy to use & bloody helpful. It’s basically like the Air BNB for Weddings but the major UP on that is you can search by style!! One click and you can view all the “Beach Venues” or “Venues with a view”. Ideal! Finding the venue is the first step to your marriage – so by making it this simple, hopefully helps a lot of people out there 🙂
Adding that something extra!
We’ve seen a few invites in our time. With the internet being so amazing these days, its hard not to find a fab Invitation. But hey, we wanted to add that tiny thing to make them a “wow” factor! Gold Foil! Firstly, we designed the Invite in photoshop & had them printed with a company which used a laser printer (350GSM). This printer uses toner which reacts with Gold Foil. So make sure toner is used, not ink!
Next, we cut a piece of gold foil (found at any crafty stores!) to match the wording size. Lay the foil on top, with the gold facing upward.
Place another sheet of paper on top & put through a hot laminator.
Try & pop it through at least two times per sheet, then peel back the foil & there you go! Can be difficult with the smaller & thin lines but it works in the end! Take your time & have fun – these look super stunning afterwards + people have said how crazy expensive they look too! When they were just made at home (Yay!)
Special thanks to Aaron (Husband to be!)
